AGUA FRESCAS: “Refreshing Waters” by Foodie’s Chef Laura Brennan

These are beverages made with fruit purees that are strained and mixed with sparkling water, flavored seltzers, coconut water or almond milk and lots and lots of big cubes of ice.

Ingredients

My ‘Agua Fresca’ Drinks

Cantaloupe

Approx. 2 cups/1 pint/ ¾ pound cut fruit

1-2 tablespoons simple syrup

2 drops lemon juice

Lemon seltzer water

Watermelon

Approx. 2 cups/1 pint/ ¾ pound cut fruit

1-2 tablespoons simple syrup

2 drops fresh lime juice

Unsweetened coconut water

Honeydew Melon

Approx. 2 cups/1 pint/ ¾ pound cut fruit

1 tablespoon simple syrup (The cantaloupe was very sweet; I added less sugar.)

2 drops fresh lemon juice

Plain (unflavored) seltzer/sparkling water

Strawberry and Almond Milk

1 large container strawberries, was and stemmed

2 tablespoons simple syrup

Splash unflavored seltzer water

Top with sweetened or un-sweetened almond milk

***simple syrup: Combine 1 cup white granulated sugar with 1 cup water in a small saucepan.

Directions

Technique

For ease of preparation, use already cut fruit.

Add a bit of sweetener if desired: granulated sugar or honey or simple syrup*** or agave or rice syrup. You choose.

Add a drop of citrus, if desired. For example, I added a squeeze of fresh lime juice to my watermelon agua fresca.

Puree the fruit in a blender and strain out the pulp. Use a fine-mesh strainer.

(Save the pulp and mix into yogurt.)

Fill your glass with ice, half-fill the glass with your prepared fruit puree and then top with sparkling water. (See headnote above).

I found half fruit puree and half flavored water to be very refreshing.
